Delicious Hearty Vegetable Soup Recipe

Ingredients:
2 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, minced
2 carrots, diced
2 celery stalks, diced
1 zucchini, diced
1 cup green beans, chopped
1 cup spinach leaves
1 can (14 oz) diced tomatoes
4 cups vegetable stock
1 tsp dried thyme
1 tsp dried oregano
Salt and pepper to taste

Directions:
1. Get the Base Ready:

In a large pot, heat the olive oil over medium heat. Sauté the garlic and onion for three to four minutes, or until aromatic.

2. Add the Vegetables:

Stir in the green beans, zucchini, carrots and celery. Let the vegetables soften a little by cooking them for five minutes.

3. Mix the Ingredients:

Add the vegetable stock, thyme, oregano, salt, pepper, and diced tomatoes. After bringing the soup to a boil, lower the heat and simmer it for 20 minutes.

4-Complete the Soup:

Add the spinach leaves and cook for five more minutes, or until they have wilted. As necessary, adjust the seasoning.

5. Serve and Enjoy:

To make a full dinner, ladle the soup into bowls and serve it with a side salad or a piece of crusty bread.
