Ingredients:
3 medium zucchinis
2 tablespoons olive oil
3 garlic cloves, minced
1 lemon (zest and juice)
1/4 teaspoon red pepper flakes (optional)
Salt and black pepper, to taste
2 tablespoons grated Parmesan cheese (optional)
Fresh parsley, chopped (for garnish)

Directions:
Get the zucchini noodles ready:
Rinse the zucchini and cut the ends off.
To make long, thin noodles, use a vegetable peeler or spiraliser. Put aside.

To prepare the Garlic Lemon Sauce:
Heat a large skillet's olive oil over medium heat.
Sauté the minced garlic for one to two minutes, or until it becomes aromatic. Do not brown.
