Ingredients (Serves 4)
1 lb (450g) shrimp, peeled & deveined
1 lb (450g) scallops
1 lb (450g) mussels, cleaned
6 garlic cloves, minced (using a Sharp Blades chef’s knife!)
½ cup unsalted butter
¼ cup olive oil
1 lemon (zest + juice)
½ cup dry white wine
¼ cup fresh parsley, chopped
1 tbsp fresh thyme
1 tsp chili flakes (optional)
Salt & pepper to taste

Detailed Instructions
Prepare the seafood:
Pat the scallops and prawns dry. Throw away any mussels that aren't opened.
Heat some olive oil:
In a skillet and sauté the garlic. Cook the chilli flakes and garlic for one minute, or until fragrant.
Sear the scallops:
For two to three minutes on each side. Take out and put aside.
Cook Shrimp:
Put shrimp in a skillet and cook for two to three minutes, or until they turn pink. Take out and put aside.
Deglaze:
Add white wine to the skillet while scraping out any browned residue. Simmer for two minutes.
Add the mussels:
To the skillet, cover, and steam for five to seven minutes, or until they open.
Reduce the heat to finish the sauce. Add butter, parsley, thyme, lemon zest, and juice.
Mix:
Put the scallops and prawns back in the skillet. Gently toss. Add salt and pepper for seasoning.
