Directions:
Get the salmon ready:
Put parchment paper on a baking pan and preheat the oven to 400°F (200°C).
The breadcrumbs, parsley, dill, thyme, garlic, lemon zest, olive oil, salt, and pepper should all be combined in a mixing bowl. Mix thoroughly to coat the breadcrumbs evenly.
Using a paper towel, pat the salmon fillets dry before lightly seasoning them with salt and pepper.
Evenly coat each salmon fillet by pressing the herb mixture onto it.
The salmon should be cooked through and the crust should be golden brown after 15 to 20 minutes of baking the fillets on the preheated baking sheet.
Prepare the Garlic Mashed Potatoes:
Boil the cubed potatoes in salted water for 15 to 20 minutes, or until they are soft, while the salmon bakes.
After draining, put the potatoes back in the pot. Add the butter, milk, salt, pepper, and minced garlic.
Mash the potatoes until they are creamy and smooth. If preferred, toss in the Parmesan cheese for added flavour.
To serve:
Arrange the salmon fillets on a platter with a heaping helping of garlic mashed potatoes.
For a splash of colour, garnish with a lemon wedge and a sprig of fresh parsley or dill.

Last Tip:
Before combining the breadcrumbs with the herbs, briefly toast them in a skillet with a little olive oil for an extra crispy exterior. This gives your fish more crunch and a richer flavour. Remember to use your Sharp Blades chef's knife to ensure that the garlic and herbs are finely diced and that every bite is flavourful!
