1 cup cooked white rice (leftover rice works perfectly)
4 large eggs
1 medium onion, finely chopped
1 medium potato, thinly sliced
1 red bell pepper, diced
2 tablespoons olive oil
Salt and pepper, to taste
1/4 cup grated cheese (optional)
1 tablespoon fresh parsley, chopped

Directions
Get the ingredients ready:
Slice the potato thinly, dice the red bell pepper, and chop the onion finely using your Sharp Blades knife.
The vegetables:
Are sautéed by heating olive oil in a non-stick skillet over medium heat.
Cook the onion for three minutes, or until it becomes transparent.
Add the bell pepper and potato slices. Cook until the potatoes are tender, stirring periodically, for 10 minutes.
To make the egg mixture:

Mix and Cook:

Slide the tortilla:
Onto a dish with caution to flip it. Flip the tortilla back into the frying pan after placing it over the platter.
Cook for five minutes on the other side.
