Soft Lemon Biscuits Recipe: A Zesty Treat for Any Occasion

Ingredients:
2 cups (250g) all-purpose flour
1/2 cup (100g) granulated sugar
1/4 cup (60g) unsalted butter, softened
1/4 cup (60ml) fresh lemon juice
1 tablespoon lemon zest
1/2 cup (120ml) milk
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla extract

Tools Required:
Bowls for mixing
Electric mixer or whisk
Measurement spoons and cups
Pastry paper, baking sheet, grater, or sieve
Rolling pin (not required)
Glass or cookie cutter

Time Spent Preparation: 15 minutes
Cook for 12 to 15 minutes.
30 minutes in total.

Directions:
Warm up the oven: 
Put parchment paper on a baking pan and preheat the oven to 350°F (180°C).

Combine Dry Ingredients: 
Whisk the flour, baking soda, baking powder, and salt in a big bowl.

Cream Sugar and Butter: 
In a separate bowl, beat sugar and softened butter until they are light and fluffy.  Mix thoroughly after adding the vanilla extract.

Incorporate Wet Ingredients: 
Slowly incorporate the milk, lemon juice, and lemon zest into the butter mixture.  Mix until incorporated.

Mix the Dry and Wet Ingredients: 
Stir the dry ingredients into the wet mixture gradually until a soft dough forms.  Take care not to mix too much.

To form the biscuits:
Roll out the dough to a thickness of approximately 1/2 inch on a lightly floured board. Cut out biscuits with a glass or cookie cutter.

Bake: 
After the baking sheet is ready, put the biscuits on it and bake for 12 to 15 minutes, or until the edges are just beginning to turn brown.

Before serving:
Allow the biscuits to cool on a wire rack.  Savour it with a cup of coffee or tea!
