Comprehensive Preparation Guidelines:
Prepare the pasta:
Bring a big pot of water that has been salted to a boil. Cook the spaghetti or linguine as directed on the package until it's al dente. Drain the pasta and set aside, reserving 1/2 cup of pasta water.
As the pasta cooks:
Use paper towels to pat the shrimp dry and sprinkle them with a little salt and pepper.
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Cook the prawns for one to two minutes on each side, or until they are opaque and pink. Take out and reserve the prawns.
To prepare the sauce:
Melt the butter in the same skillet over medium heat. Sauté the red chilli flakes and minced garlic for one to two minutes, or until aromatic.
Add the heavy cream and either vegetable or chicken broth, and stir to mix. Simmer the sauce for two to three minutes, or until it thickens slightly.
Put Everything Together:
Toss the cooked pasta and prawns in the skillet to cover them in the sauce. Add a little of the pasta water you set aside if the sauce is too thick.
Add the lemon zest (if using) and grated Parmesan cheese. To taste, add salt and pepper.
Serve:
For added brightness, garnish with fresh parsley and a splash of lemon juice. Serve right away and savour!
