Cobb Salad with Roasted Sweet Onion Dressing

A traditional American dish, the Cobb salad is renowned for its robust ingredients and deep flavours. This recipe has a sweet and tangy twist thanks to the homemade Roasted Sweet Onion Dressing. This salad is wholesome and filling since it is full of protein, crisp greens, and creamy avocado.  Ideal for a small dinner or a fast lunch!

Ingredients
For the Salad:
6 cups mixed greens (romaine, arugula, spinach)
2 hard-boiled eggs, sliced
1 avocado, diced
1 cup cherry tomatoes, halved
1 cup cooked chicken breast, diced
6 slices crispy bacon, crumbled
½ cup blue cheese (or feta), crumbled
¼ cup red onion, thinly sliced

For the Roasted Sweet Onion Dressing:
1 large sweet onion, roasted
¼ cup olive oil
2 tbsp apple cider vinegar
1 tbsp Dijon mustard
1 tsp honey
½ tsp garlic powder
Salt & pepper to taste

Time Spent Preparing: 15 minutes
20 minutes to cook (to roast onions)
35 minutes in total.

Directions
Warm up the sweet onion:
Turn the oven on to 400°F, or 200°C.  After peeling and chopping the sweet onion, roast it for 20 minutes until it caramelises. Drizzle it with olive oil.  Let cool slightly before blending.

To make the dressing: 
Put the roasted onion, dijon mustard, apple cider vinegar, honey, garlic powder, salt, and pepper in a blender.  Blend until it's smooth.  If necessary, change the seasoning.

To assemble the salad:
Place mixed greens in a big bowl.  Arrange the chicken, bacon, avocado, cherry tomatoes, red onion, blue cheese, and hard-boiled eggs in neat rows.  Pour the roasted sweet onion dressing over the dish liberally.

Serve and Savour!
Keep ingredients piled for presentation, or toss lightly before serving.
