Creamy Tuscan Chicken Recipe

This one-pan recipe for Creamy Tuscan Chicken is restaurant-caliber! Sun-dried tomatoes, spinach, Parmesan, and a garlicky cream sauce simmer alongside succulent chicken breasts. Ready in 30 minutes, this dish goes well with spaghetti or crusty toast and is ideal for hectic weeknights.

Ingredients:
4 boneless, skinless chicken breasts
2 tbsp olive oil
1 cup heavy cream (or half-and-half)
½ cup chicken broth
½ cup grated Parmesan cheese
1 cup spinach, chopped
½ cup sun-dried tomatoes (oil-packed), sliced
3 garlic cloves, minced
1 tsp Italian seasoning
Salt & pepper to taste
Red pepper flakes (optional)

Big skillet made of stainless steel or cast iron
Tongs
Measurement spoons and cups

Cooking Duration:
Ten minutes for preparation
Cook for 20 minutes.
30 minutes in total.

Directions:
Sear and season the chicken:
After patting the chicken dry, add Italian seasoning, salt, and pepper.  In a skillet, heat the olive oil over medium-high heat.  Sear chicken until golden, 5 to 6 minutes per side.  Take out and put aside.

To prepare the sauce:
Sauté the garlic for 30 seconds in the same skillet.  To deglaze, add chicken broth while scraping away any browned bits.  Add spinach, sun-dried tomatoes, Parmesan, and heavy cream and stir.  Simmer until slightly thickened, 3 to 4 minutes.

To finish and serve:
Put the chicken back in the skillet and cover it with sauce.  Cook until the chicken reaches 165°F (74°C), 2 to 3 more minutes.  Add more Parmesan and red pepper flakes as garnish.  Serve with garlic toast or over pasta.
