Ingredients
For the Ham:
1 (5-7 lbs) bone-in smoked ham
1 cup honey
½ cup brown sugar
2 tablespoons Dijon mustard
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
3 ripe pears, cored and sliced
1 cup apple cider or pear juice

Directions
First, get the gammon ready.
Set the oven temperature to 325°F (160°C).
Score the ham's surface in a diamond pattern, about ¼ inch deep, using a sharp Damascus chef knife. This enables the meat to be flavoured by the glaze's penetration.
