Searching for a dinner that is both filling and light? Encased in crisp lettuce leaves, these Turkey Lettuce Wraps are bursting with fresh vegetables, protein, and flavour. Quick to prepare and full of flavour, this meal is ideal for a low-carb, gluten-free, or ketogenic diet.
Ingredients:
1 lb (450g) ground turkey
1 tbsp olive oil
1 small onion, finely diced
2 garlic cloves, minced
1 tbsp fresh ginger, grated
1 bell pepper, diced
1 carrot, julienned
2 tbsp soy sauce (or coconut aminos for gluten-free)
1 tbsp hoisin sauce (optional)
1 tsp sesame oil
1 tbsp rice vinegar
1 tsp sriracha (adjust to taste)
½ cup water chestnuts, chopped (for crunch)
¼ cup green onions, sliced
1 head butter lettuce or romaine, leaves separated
Sesame seeds & cilantro for garnish

Preparation and Cooking Time:

Directions:
Get the lettuce ready:
Wash and pat dry the lettuce leaves gently. Put aside.
Sauté Aromatics:
In a skillet over medium heat, warm the olive oil. Cook the ginger, garlic, and onion for one to two minutes, or until fragrant.
Cook Turkey:
Use a wooden spoon to break up the ground turkey. Cook for 5 to 6 minutes, or until browned.
Add the vegetables:
Stir in the water chestnuts, carrot, and bell pepper. Cook until slightly tender, 3–4 minutes.
Add soy sauce:
Hoisin, rice vinegar, sesame oil, and sriracha for seasoning. Stir thoroughly.
Simmer:
Simmer for two minutes, adding a dash of water if necessary.
Add green onions:
Stir to garnish and serve. Transfer the mixture into lettuce cups and sprinkle with cilantro and sesame seeds.
